Well, hello.
Tina and I’ve gotten bogged down by the summer and we’ve completely neglected our little corner of the internets. We apologize. We can’t promise it won’t happen again, but we CAN promise that we’ve been busy slaving away in our kitchens to bring you some delicious recipes.
I’ve been taking full advantage of all the great produce summer brings, and this salad is no exception. It’s so simple, so clean tasting, and very refreshing.
corn, grape tomato, radish, sweet onion and snap pea salad.

2 ears fresh corn, cut off the cob
half a box of grape tomatoes, halved
3 large radishes, sliced thinly
1/2-1 Vidalia onion, choppedĀ (depending on size & your love of onion)
a handful of sugar snap peas, cut in thirds
a couple dashes of champagne vinegar
a good glug of olive oil
salt and pepper, to taste
Combine all veggies together, and add vinegar, oil and salt and pepper. Adjust vinegar, oil and seasonings to taste. Serve, or refrigerate until time for supper.
You really could add or subtract as many veggies as you’d like here. And so many people believe you ought to cook the corn first, but I love it raw and straight from the cob. If you’ve never tried it that way, DO IT.
