So, we are back on the wagon — not the plain, boring chicken and salad route, but pretty dang close. As such, I’m looking for easy ways to spice up chicken without adding a lot of fat and calories.
This wins, in both the unique taste category and prettiest supper category. Note: If you don’t have a cherry pitter like me, you will make a mess and you may find cherry juice all over your kitchen and/or face. Worth it.
Chicken with Cherry Salsa.

1 1/2 lb cherries, pitted & roughly chopped
1/2 cup minced red onion
2 tbsp lemon juice
2 tbsp chopped fresh basil
1 tbsp balsamic vinegar
2 tsp honey
1/4 tsp salt
4 chicken breasts, pounded to uniform thickness
extra virgin olive oil
salt & pepper
Combine cherries, red onion, lemon juice, basil, balsamic vinegar, honey, and salt in a bowl. Set aside.
Heat a large skillet over medium heat, and add oil to coat. Add chicken to skillet and cook 4 minutes per side, or until done. Remove from skillet and let rest for 5 minutes before topping with fresh cherry salsa.
This chicken plus some jasmine rice and a salad = heaven on a plate.

I tried this recipe last week and OMG… It is amazing. And easy. We put the Chicken on the grill but the salsa is fantastic. We had the leftover chicken and salsa the next night over baby Romaine lettuce with a little honey lemon vinaigrette… Also fantastic. I love love love your blog.
