We had some friends over for supper last weekend and I needed a quick and easy dessert that I could throw together and these bars fit the bill just perfectly. I had (almost) everything in my pantry already and I think it really took me all of 10 minutes to put together to get it in the oven. No mixer, no flour all over the kitchen, no waiting for the butter to soften.
7 Layer Cookies.

1 stick (1/2 cup) salted butter, melted
1 cup graham cracker crumbs
1 cup sweetened coconut
1 cup semisweet chocolate chips (or use the whole bag, I won’t tell)
1 cup butterscotch chips (or use the whole bag, not that I would)
1 14 oz can sweetened condensed milk
1 cup finely chopped pecans
Preheat oven to 350. Lightly grease (or line pan with foil and then grease) an 11 x 8″ pan. Combine the melted butter and graham cracker crumbs and press into the bottom of the pan.
Layer the coconut, chocolate and butterscotch chips and then pour the sweetened condensed milk over the top. Top with pecans.
Bake at 350 for 25 minutes or until bubbly.
You’re going to want to just top it with ice cream.
