So, you made that delicious, creamy, decadent macaroni and now you’ve got 2/3 of a container of mascarpone left. What are you going to do with it? Well, if you’re smart and do what I suggest, then you will make these cookies. At first glance, you’re going to think, “wow. What an odd idea for a cookie.” And you will not be alone.
See, when you have a semi-professional baker as a best imaginary friend, you find recipes for baked goods and you immediately send them to her for inspection. Which is what I do on the regular, actually. And when you completely stump your Culinary Genius Imaginary Friend, you have to decide whether you want to try them anyway or not. Shocking no one, I only listen to her about half the time. Occasionally, it turns out ok for me.
Make these. They’re easy, you already have most of this on hand, and they are so different and tasty that you’ll be glad that you went out on a limb.
Mascarpone Oreo Cookies

1 cup butter, softened
3 oz mascarpone cheese
1 cup sugar
1 egg yolk
2.5 cups flour
1 tsp vanilla
5-7 crushed Oreo cookies
Preheat oven to 325.
Cream butter and mascarpone in mixing bowl for 3 minutes. Add sugar slowly and beat until fluffy.
Add egg and vanilla, then slowly beat in flour until combined.
Stir in Oreos.
Scoop cookie dough onto prepared baking sheet and bake for 12-15 minutes. Cool on cookie sheet for 5 minutes before transferring to baking rack to cool completely.
