Maybe not world famous, but I’ve given this recipe to more people over the last 10 years and everyone loves it. Like, addicted and can’t stop eating it loves it. I usually try to start a week around here with a healthy supper recipe, but this is going to have to do for this Monday.
Make it for your next party, or just on a lazy Sunday afternoon. It makes a TON so I usually cut it in half but if you’ve got a crowd, it will disappear!
Jalapeno Corn Dip.
32 oz. cream cheese
3 cups Mexican blend shredded cheese
1 cup mayo
1 can Mexican corn, drained
4 tbsp (or to taste) diced pickled jalapenos, with juice
In a bowl, melt the cream cheese and shredded cheese in the microwave.
Add the other ingredients and mix well.
Pour into a baking dish and bake at 350 degrees until it bubbles, usually about 20-30 minutes.
Serve with Fritos.
