So, when I last left you, I was waxing poetic about my new best friend, Ina Garten, and y’all the goodness just continues. I’ve made no fewer than a half dozen of her recipes over the past two weeks, and each of them has been great. I am starting to wonder if I might have a problem. A fail-safe, delicious problem. Anyway, I wanted to bake a little something to follow the lasagna so I picked Ina’s old-fashioned banana cake – let’s be honest, it was the cream cheese icing that sealed the deal. I had some leftover, which we may have not added as a dollop of “whipped cream” to individual pieces. Make this, and see if you can bear to throw out any leftovers before you judge, m’kay?

Ina’s Old-Fashioned Banana Cake.

3 very ripe bananas, mashed
3/4 cup sugar
1/2 cup light brown sugar
1/2 cup vegetable oil
2 extra large eggs
1/2 cup sour cream
1 tsp vanilla extract
zest of one orange
2 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
1/2 cup chopped pecans or walnuts

Preheat the oven to 350 and grease a 9-inch round cake pan.

In the bowl of an electric mixer, add the bananas and both sugars on low speed until combined. Add the oil, eggs, sour cream, vanilla and orange zest. Mix on low until smooth.

In a separate bowl, sift flour, baking soda and salt. Add the dry ingredients to the mixer and mix on low until combined. Stir in chopped nuts. Pour batter into the prepared pan and bake for 45 to 50 minutes, until a toothpick inserted in the center comes out clean. Cool in the pan for 15 minutes, and then turn out to a cooling rack until cooled completely.

Spread the frosting thickly on top of the cake.

Ina’s Cream Cheese Frosting

6 ounces cream cheese, at room temperature
6 tbsp butter, at room temperature
1 tsp vanilla extract
2 1/2 cups sifted confectioners sugar

Mix the cream cheese, butter and vanilla in the bowl of an electric mixer, on low. Add the sugar and mix until just combined. Ina says “Don’t whip!”
