Bruschetta with Goat Cheese, Blackberries, and Honey

I’m not even sure I’d call this a recipe, but I’m going to share it anyways. It’s just a delicious combination of flavors that lends itself to being a quick and easy snack or appetizer – and it looks pretty great, too!

Bruschetta with Goat Cheese, Blackberries, and Honey

Bruschetta with Goat Cheese, Blackberries, and Honey
makes 12-16 pieces

1 baguette, cut into 1/4″ slices
1 pint blackberries, halved lengthwise
4 oz soft goat cheese
honey
olive oil

1.) Lay your baguette slices in a single layer on a baking sheet, and lightly mist them with olive oil. Toast in a 350° oven for about 10 minutes, until the edges are nice and golden brown.

2.) When the baguette slices are cool, spread each one with goat cheese. Top with halved blackberries, and drizzle with a bit of honey.

…aaaaand, that’s it! Like I said, not much of a recipe, but a wonderful flavor and texture combination – crunchy bread, soft goat cheese, juicy berries. Tangy goat cheese, sweet and tart berries, sweet honey. Beautiful for an impromptu dinner party (as an appetizer OR dessert), or to serve at brunch for a crowd. Or, you could just whip up a couple pieces for yourself, and eat it on the couch in your sweatpants. Not that I would do that, personally. Of course not.

Who said bruschetta was just for tomatoes?
